Recipe: Post Raisin Bran Fruit and Nut Cookies

Apparently there are more ways than in a cereal bowl with milk to eat Post Raisin Bran. This recipe is perfect if you’re looking for something yummy – and healthy – to bake on a rainy afternoon. Enjoy with a cup of tea and you’re all set!

 


Servings: 3.5 dozen cookies

Total Time: 25 min.


Ingredients

1/2 cup firmly packed brown sugar

1/4 cup oil

2 tbsp. water

2 egg whites, slightly beaten

1 tsp. ground cinnamon

1/2 tsp. baking soda

1/8 tsp. salt

1-1/2 cups Post Raisin Bran Cereal

1 cup flour

1/4 cup chopped walnuts

1/4 cup chopped dried apricots (optional)

Directions

Mix sugar, oil, water, egg whites, cinnamon, baking soda and salt in large bowl. Add cereal and flour; stir until well blended. Add walnuts and apricots; mix well.
Drop rounded teaspoonfuls of dough, 2 inches apart, onto cookie sheets sprayed with cooking spray.
Bake at 350°F for 10 minutes or until lightly browned. Remove to wire racks; cool completely. Store in tightly covered container at room temperature. Makes about 3-1/2 dozen cookies.

Tips and Suggestions

Substitute: Substitute dried cherries or cranberries for the apricots. Substitute slivered almonds or pecans for the walnuts.
