Recipe: Golden Pilaf with Apricots, Raisins and Almonds

Ingredients

2 tbsp. GOYA® Extra Virgin Olive Oil

½ cup slivered, blanched almonds

½ yellow onion, finely chopped (about ¾ cup)

1 packet Sazón GOYA® with Saffron

1 tsp. salt.

½ tsp. ground cardamom

½ tsp. ground nutmeg

¼ tsp. GOYA® Ground Cinnamon

1 box (12 oz.) GOYA® Basmati Rice

2½ cups water

½ cup whole milk

½ cup dried apricots, finely chopped

¼ cup raisins

 

Directions

1. Heat oil in medium saucepan over medium heat. Add almonds; cook, stirring frequently, until light golden brown, about 3 minutes. Using slotted spoon, transfer to small bowl; set aside.

2. In same saucepan, stir in onions; cook, stirring, until translucent, about 5 minutes. Add Sazón, salt, cardamom, nutmeg and cinnamon. Cook, stirring, until spices are fragrant, about 30 seconds. Add rice; continue cooking until rice is completely coated and begins to toast, about 1 minute.

3. Stir in water, milk, apricot and raisins; bring to boil. Reduce heat to medium low. Simmer, covered, until water is absorbed and rice is tender, about 15 minutes. Fluff with fork; garnish with reserved almonds and serve.
